GYG Ingredients, Allergens & Sensitivities
Search raw ingredients, marinades, seasonings, and dressings straight from the official Guzman y Gomez kitchen specification. Check for all major allergens including gluten, dairy, soy, egg, as well as alliums (onion/garlic) and fresh coriander.
Menu items may contain gluten, wheat, milk, egg, soy, sesame, peanuts, tree nuts, and lupins due to shared kitchen environments. Items like corn chips and hard taco shells are cooked in fryers also used for chicken tenders, presenting a risk of shared fryer cross-contact.

How to use the GYG ingredients list
This list covers 71 components: tortillas, rice, beans, fillings, salsas, sauces, dips, sides and breakfast ingredients. Each row shows the ingredient text as published, the declared allergens, and tags for vegetarian, vegan, garlic, onion, chilli, coriander and tomato. It answers the question the menu cannot: what is actually inside the thing I am about to order.
For a whole meal, start from its page in the GYG menu, note the standard ingredients, and search for each one here. For allergens in a single table, use the allergen matrix. If you are choosing between meals for a diet, the vegan, vegetarian and gluten-free pages already do the sorting.
Reading an ingredient label
Ingredient text is listed from largest to smallest by weight, so the first few words tell you what dominates. A seasoning with salt first is mostly salt, which matters if you are watching sodium (see the methodology page for how sodium is handled). Words in capitals or bold on the original label usually mark an allergen, and we show the allergen separately in its own column so you do not have to hunt for it.
Sensitivities that are not allergies
37 of 71 components declare no major allergen, but that does not make them safe for everyone. Garlic, onion, chilli and coriander are not on the major allergen list, yet people avoid them for medical reasons. Use the sensitivity filters above to rule them out, and remember that a shared kitchen means trace amounts are always possible.
GYG ingredients: common questions
What is in the GYG grilled chicken?
Use the search box above and type "chicken". It lists the full ingredient text for the grilled chicken, including marinade components and any declared allergens.
Does GYG use garlic and onion?
Yes, widely: 28 of 71 listed components contain garlic and 30 contain onion. The "No Garlic" and "No Onion" filters above show which ones do not.
Which GYG ingredients are vegan?
47 of 71 listed components are vegan, and 63 are vegetarian. Use the vegan filter, then check each menu item page for how they are combined.
