How we work out the numbers

Where each figure comes from, how Calories and kilojoules relate, and how a custom order is added up.

Data source

Everything starts with the Allergen, Ingredient and Nutritional Information document published by Guzman y Gomez for its Australian restaurants. We enter the published values for each standard item and keep the item and ingredient names as they appear there. If the restaurant has not published a figure, we do not show one. The figures were last checked against that document on 12 October 2026.

What each figure means

  • Serve size is the weight of the portion in grams.
  • Energy is shown in kilojoules and Calories.
  • Protein, total fat, carbohydrates, sugars and fibre are in grams per serve.
  • Saturated fat is the part of total fat that is saturated, in grams.
  • Sodium is in milligrams per serve.

Cal and kJ

One Calorie (kilocalorie) is 4.184 kilojoules. To go from kJ to Cal, divide by 4.184. To go the other way, multiply. The converter above does it for you.

Behind the scenes, Australian food labelling works out energy from the nutrients: about 17 kJ per gram of protein, 37 kJ per gram of fat, 17 kJ per gram of available carbohydrate and 8 kJ per gram of fibre. That is why the energy on a label is a calculation, not a burnt-in-a-furnace measurement.

Custom builds

When you change something in the meal builder, we start from the published numbers for the base item and add or subtract the published difference for that change. As an example, swapping white rice for brown rice in a burrito changes it by -14 Cal and adds 0.9 g of fibre, and swapping black beans for pinto beans adds 35 Cal and 2.8 g of protein. Each swap uses its own figures, so changes in a bowl or a mini are not the same as in a regular burrito.

Why numbers can differ

Published values are rounded, so two items can look inconsistent. For example, Pulled Pork Quesadilla and Mini Burrito - Grilled Chicken are both listed at 1,890 kJ, yet one shows 450 Cal and the other 451 Cal. We keep each figure exactly as published rather than quietly correcting it.

Real meals also vary. Food is assembled by hand, avocados and tomatoes change with the season and a heavier scoop of rice or cheese adds up. Treat any total as a close guide, not a lab result.

What we do not do

We do not estimate nutrition for anything the restaurant has not published, we do not scale a figure by weight, and we do not adjust values to look neater. Dietary tags and allergen lists are taken from the published ingredient information and say nothing about cross contact. For the full picture read the disclaimer, and if you spot a mistake, please report it.
